Quick Butter Cream – Marshmallow Recipe

To prepare this simple yet original cream, you will need only two ingredients: marshmallows and butter. You can use classic marshmallows or choose fruit-flavored ones to add an extra twist. The butter should have a fat content of 82% for the best texture. You will also need a mixer.

Measure equal amounts of marshmallows and butter, for example, 150 grams of each. Cut the butter into small cubes. Place the marshmallows in a bowl, cover with plastic wrap, and microwave for about 1 minute until they become hot and melted. Add half of the butter to the melted marshmallows. Beat the mixture with a mixer for 1–2 minutes until smooth.

Next, set the bowl over a container filled with ice water. Add the remaining butter and continue beating with the mixer until the cream becomes smooth, thick, and cool. The cream is ready to use. Store any leftovers in the refrigerator for no longer than two days.

If you do not have a microwave, you can melt the marshmallows using a double boiler. Bring water to a boil in a saucepan and place a heatproof bowl on top, making sure the bottom does not touch the water. Melt the marshmallows gently using the steam.

This marshmallow buttercream is perfect for sponge cakes, profiteroles, éclairs, pastry rolls, layered cakes, and many other desserts. It is so light and tasty that you can even enjoy it on its own with a spoon.
